Ingredients;
One tablespoon ground coriander
One tablespoon ground cumin
One tablespoon ground cardamom and chili powder
One tablespoon grill seasoning
One teaspoon smoked paprika
½ teaspoon ground turmeric
One lemon, juiced, divided
One large clove, garlic, minced
Five tablespoons extra-virgin olive oil
4(6 ounces) skinless, boneless chicken breast
One large sliced onion
One sliced red and yellow bell paper
Salt and ground black pepper to taste
1/1/2 cups greek yogurt
¼ cup tahini
Four pita bread rounds
Instructions:
Step 1.
Preheat a grill and lightly oil it.
Step 2.
Whisk together the cumin, cardamom, coriander, chili powder, grill seasoning, paprika, and turmeric in a bowl; whisk in juice of ½ lemon, garlic, and three tablespoons olive oil to form a paste. Season the chicken breasts with the paste.
Step 3.
Grill chicken breasts on the preheated grill until juices run clear The chicken is no longer pink at the center, about 6 minutes on each side. Transfer chicken to a plate and cool for 1 to 2 minutes; slice as thin
Step 4.
Heat 2 tablespoons of pure olive oil in a large frying pan over medium-high heat. Mix the onion, red pepper, and yellow pepper into the hot olive oil; season with salt and pepper. Cook, frequently stirring, till the vegetables become soft, about 5 minutes.
Step 5.
Whisp together Greek yogurt, tahini, juice of remaining ½ lemon, and staying one teaspoon olive oil in a bowl until smooth; season with salt.
Step6.
Place pitas bread on the grill until heated through and lightly sear
on the outside, about1 a minute per side. To assemble each sandwich, place some sliced chicken on each pita bread; top with some pepper mixture and yogurt tahini sauce.
